Mr.Iida Takashi, CEO of ONEST,Inc. is the owner of La Cialda.He opened the shop because he thought more people should know about the appealing background story of the delicious cialda .

Cialda used to be a sweet for celebrating weddings, symbolizing the ties between the two families

Cialda is a sweet originally from the Tuscan region of Italy, starting from the 14th century.
The famous House of Medici ruling the Tuscan region, is said to have given the guests cialda at the time of wedding.The beautiful design of cialda comes from a family crest, a crest of the groom was pressed on one side, and one of the bride on the other side.Therefore, cialda symbolized the ties between the two families, wishing the good luck of the marriage.

 

Spreading along with the missionary work of Christianity

Charda spread along Europe with the missionary work of Christianity. During the Passover ceremony of bread and wine, cialda was often used as bread.

 

Waffles and Gofur also originates from Cialda

Two flavors of cialda are served

La Cialda serves two flavors of cialda, plain and cheese. S size has about a diameter of 12cm, and is ¥150. L size has about a diameter of 18cm, and is ¥350.(June 2018)

Flour and millet sugar carefully selected for the dough are used.They are slightly sweet, tasting natural and delicious.You can taste the rich butter and the crispy texture.

The flavor of cheese is La Cialda’s original. The dough has been kneaded with plenty of cheese, the cheese flavor and salt are a exquisite match. With a crispy texture and scent of rich cheese, you get quite a different impression of cialda compared to the plain flavor. It is also matches well with alcohol, topping smoked salmon or prosciutto would be great.

Crispness close to the original of Italy, with its own recipe

The Crispness is a big feature of cialda, but La Cialda had a hard time finding the perfect recipe to make it close to that of Italy.Since Japan has a humidity higher than that of Italy, the original Italian recipe would not become crisp when made in Japan. As a result of repeated trial and error, by increasing the number of steps after hot pressing, they finally found the perfect way to make the crisp texture.

Mr. Iida has a concept to make the spread so that he could serve sweets that are safe and healthy for children, so no preservatives are added.
Jiyugaoka, where La Cialda is, is a residential area where many people live with their family.Many of the customers come with their children, and the parents are often concerned about whether the ingredients are safe for their children to eat.
Mr. Iida says, “I want to make La Cialda a warm and cozy place where the residents of Jiyugaoka buys a cialda and can talk a bit inside the shop.”
So not adding preservations in the cialda and spreads are a commitment by Mr. Iida, to “make the shop loved by local residents”.
