新しいスイーツ

ギャレットのポップコーン作りは原材料となるとうもろこしを栽培するところから始まる。契約農家でポップコーンのために育てられたとうもろこしはとても大粒。ノンオイル製法にて作られてたふわっとライトな食感も特徴だ。

カリカリの食感とさまざまなフレーバーとが合わさり、食べ始めると思わず手が止まらなってしまうギャレットのポップコーン。果たしてどのようにして作られているのだろう。商品づくりのこだわりをギャレットジャパン代表、望月 美帆子氏にお聞きした。

甘さとほろ苦さの絶妙ハーモニー『キャラメルクリスプ』

1934年、ギャレット ポップコーンのルーツともなるギャレットファミリーの食卓のレシピを今もなお受け継ぎ大切に守られてきた『キャラメルクリスプ』。看板商品とも言えるこちらはギャレットで一番最初に誕生したフレーバー。

ポップコーンに使われているとうもろこしの品種は2種類あるそう。一つはマッシュルーム型と呼ばれる、キノコのように丸い形をしたもの。もう一つはバタフライ型と呼ばれる少し歪な形をしたものだ。メーカーによっては1種類のみ、もしくはフレーバーによって品種を使い分けするようだが、ギャレットの場合、どの商品も2種類ブレンドさせている。そうすることで、食感や風味がより豊かになるのだそうだ。

「例えばキャラメルをコーティングした際、マッシュルーム型（左）の表面はつるりと丸くなっているので均等に絡まります。一方、歪な形をしたバタフライ型（右）は溝にキャラメルがたまり、食べると口の中でじゃりっとした歯触りを感じられます。それぞれの食感の違いを楽しむことができるのはもちろん、味にも変化が生まれるので単調にならず、いつまでも食べ進めてしまえるのです」

コーティングするキャラメルもギャレットのオリジナル。特製の窯でじっくり丁寧に作られるキャラメルは、ほろ苦いアクセントをきかせたまろやかな甘み。どれだけ食べても甘ったるく感じない理由も、甘さと苦味の絶妙な塩梅ゆえだろう。
美味しさを追求するために、手作業であることにもこだわっている。例えば、ポップコーンにキャラメルをコーティングする工程であれば、銅釜の中でキャラメルを炊き、そこにポップコーンを入れて混ぜ、ポップコーンと徐々に絡めさせる。

全体に絡まったら、冷気の出てくる穴がいくつも開いた大きなステンレスバッドに移し、ポップコーンを一つひとつばらしながら仕上がりを見極める。言葉にするととてもシンプルに聞こえてしまうかもしれないが、職人たちは毎日、工程の細部に”一手間“を加えながら伝統レシピを明日へとバトンし続けている。

全て機械任せにしてしまえば作り手の負担は減り、効率化されることだろう。しかし手を抜けば、多少なりとも食感や風味は変わってしまう。食べる人からすればそれは気づかぬほどの差かもしれないが、そのごくわずかな違いも良しとしないのは、長年紡がれてきた歴史を大切にする想いから。

そんな『キャラメルクリスプ』は、甘いものが苦手な方や男性にもおすすめだ。

濃厚チェダーチーズの凝縮感を味わう『チーズコーン』

熟成したチェダーチーズがたっぷり染み込んだ『チーズコーン』は、チェダーのコクが口いっぱいに広がるなんとも贅沢な一品。
これまでチーズ味のポップコーンを食べたことはあったものの、表面だけでなく中までしっかりチーズが染み入り、口に入れた瞬間に広がる濃厚な香りはもちろん、噛めば噛むほどよりチーズの旨味が増して行くのはギャレットならでは。
その理由は、粉末ではなく固形のチェダーを溶かし絡めながら味をつけるといった工程を踏んでいるため。これによりポップコーンの中までしっかりチェダーそのものが染入り、食べるとチェダーそのもの香りや味わいが口に広がる。

全店舗の一番人気の『シカゴ ミックス』

先程紹介した『キャラメルクリスプ』と『チーズコーン』はほぼ同時期に生まれたのだが、この2つを同時に味わえる『シカゴ ミックス』は、常連さんのリクエストによって誕生したのだとか。

「『チーズコーン』と『キャラメルクリスプ』を混ぜて欲しいとオーダーされていたお客さまがいらっしゃったらしく、その方を真似て周りのお客さまたちからもオーダーを受けるようになり『シカゴ ミックス』と名付けて定番化されました。今ではギャレットの店舗がある世界中どこの国でも一番人気商品です」

チーズコーンの塩味と、キャラメルのほろ苦い甘さ。真逆ともとれる2つの味が合わさることで、それぞれ単体で食べる時とは全く違う味のハーモニーを楽しめる。時にそれぞれ、時に一緒に頬張りながら、味の変化を楽しんでみてはいかがだろう。

ファンを飽きさせない豊富な限定フレーバー

日本に店舗を構えてから今年で8年目を迎えたギャレットジャパン。今までに発売した限定フレーバーの数は、なんと全部で52種類！1ヶ月半から2ヶ月の間に1種類は出しているのだという。「ギャレットという名前をつねに頭の中に入れておいて欲しい」という想いから、かなりのハイスピードで展開されている。

今年の2月末に登場した『ベリーベリーホワイトチョコレート』は、ホワイトデーに向けた期間限定商品だ。可愛らしいピンク色をポップコーンで表現するため、着色料などは一切使用せず、いちごそのものをパウダーやフレークにして色味を出した。

ポップコーンと言えば白や茶が一般的だが、ギャレットの店頭にはカラフルなポップコーンが並び、目にも楽しませてくれる。ポップなパッケージは食べ終わっても捨てずについ残しておきたくなる。

春限定で登場する『Garrett SAKURA缶』。ピンクカラーをベースに桜の花びらが散りばめられたデザインは、女性のみならず男性がギフトで選ぶことも多いそう。今後もどんどん限定商品が登場するため目が離せない。
